This is literally the easiest filling recipe with a flavor that will always impress.
- 1 Part (8oz) Good Quality Baking Chocolate (like this)
- 1 Part (8oz) Heavy Whipping Cream
- 1 Tablespoon Granulated Sugar (optional–see what you like!)
- That’s everything!
- Break your chocolate squares into pieces on a medium-large cutting board.
- Using a large sharp knife, cut the chocolate into thin, small slivers. The smaller your cuts, the better your chocolate will melt and this will avoid lumps.
- Using the back of your knife, slide the chocolate into a heat safe mixing bowl.
- In a sauce pot, gently bring your whipping cream to a simmer over medium heat on your stove. Allow the cream to become steamy with a slight simmer, being careful not to reach a rolling boil.
- Gently pour the cream over your chopped chocolate in your heat safe mixing bowl.
- NOW WAIT, but just for about 2 minutes.
- Gently stir with a spatula until the mixture is dark chocolate in color and creamy in texture with no loose liquid.
- Now wait for the ganache to cool to reach the consistency you desire. For dipping strawberries, use right away, for filling a a cake, allow 5 minutes to thicken slightly. For a thicker filling like inside a macaron or as a thicker icing on cake, wait 30 minutes to an hour.
